Peking Duck: A Tradition Spanning Centuries

Peking duck is a dish from the imperial table with a history spanning centuries.

The philosophical dish

Cooking a Peking duck is like writing a complex musical score: there is no room for haste, and each bar is subordinated to one great goal —crisp, amber skin and melting meat in your mouth. This is not just a recipe, but a whole philosophy of patience that begins long before the oven fills the restaurant with aromas of caramel and spices.

Legal Significance From China

It all starts with a choice: a selected, noble bird weighing about two and a half kilograms, with smooth, flawless skin is delivered to J.Z. Pecking Duck heading from China. The master chef of the Beijing duck at our restaurant, Liu Dianhua (the third-generation chef of “one dish”, keeper of traditions and recipes) uses a special breed of duck bred over centuries of breeding in the vicinity of Beijing and having a unique meat structure and fat layer necessary for proper cooking!

The legendary crystal

First of all, excess fat is removed from the neck and tail, and the sharp tips of the wings are removed so that they do not become charred in the heat. Then the fire is scalded with boiling water-this is a secret ritual that causes the pores of the skin to shrink, like a string stretched before a concert. It is wiped dry, rubbed with salt and spices, and sent to the cool of the refrigerator for a long twelve hours, suspended vertically — so the air washes over it from all sides, drying every millimeter of the skin.

After half a day, the second act begins: the duck is taught with the thinnest layer of honey, and she returns to cold solitude for another twelve hours. Honey doesn’t just add sweetness-it creates a future caramel glaze that will later shine golden in the sun. At this time, the skin becomes as thin as parchment and as elastic as an eardrum — this is the legendary crystal for which the dish is famous.

The Magic Seal

But the real mystery, the kind of magic that turns a cooked carcass into a culinary masterpiece, does not happen at all in an ordinary restaurant kitchen. In the heart of Beijing, in legendary restaurants with a history dating back to the imperial dynasties, there is a special oven — tall, similar to an ancient brick well. This is not just an oven, but a real temple of fire. The exact same oven, specially imported from China, is installed in the J.Z. Peking Duck restaurant in a separate area at the first stage, which allows our master Liu to cook Peking duck according to the legendary Imperial recipe.

There are no usual baking trays or grates inside this seal. Here, the duck has a different fate: it is suspended from long poles to horizontal crossbars. She floats in the hot air, a verbally precious exhibit, without touching the walls and, most importantly, without touching the fire. This method, born in the imperial palaces, is called “hanging” baking. The heat of the oven is smooth and fragrant — it teaches the duck from all sides. In this uneven growth with a temperature that can reach 200 degrees in the oven, excess fat begins to melt and drain down with a hiss, and the skin gradually turns into that legendary amber caramel crust.

Cooking time

The whole process takes 40 to 80 minutes, but this moment is the culmination of two days of patience. In the ovens of the great Beijing restaurants, this method has been perfected for centuries. The art of baking over an open fire is recognized in China as a national intangible cultural heritage. This is not just a cooking method, it is a centuries-old tradition, a dance of fire and air, in which a dish is born, sung all over the world.

As A Rule, There Is A Peking Duck

The true magic of Peking duck is not revealed in the kitchen or even when it is taken out of the oven. He steps at the table when this work of art turns into an action in which both the cook and the guest participate. There is no place for forks and knives here — extra hands, thin pancakes and an ancient ceremony honed over the centuries.

The master is at your desk

It all starts with the appearance of Chief Liu Dianhua at your table. He holds a long, finely honed knife, and with surgical precision cuts off the thinnest, most transparent slices from the carcass. Each piece certainly includes a crispy caramel skin and tender, juicy meat. In a few minutes, the carcass turns into a neat row of slices laid on a porcelain dish, and next to it on the table are already waiting for the thinnest pancakes, silk shawls, thick, sweet-spicy hoisin sauce, finely chopped green onion feathers and thin strips of fresh cucumber. During this ritual process, our waiters introduce the guests to the chef, the history of the dish and the tasting ritual.

The first taste immersion

And then the main ritual begins. The guest takes a pancake in the palm of his hand-it should still be plump and elastic. Place one or two slices of duck on its center so that the adjacent layers are on the surface, having previously dipped in hoisin sauce. He adds a few onion feathers and a couple of cucumber straws-their freshness is designed to set off the richness of the meat. After that, the pancake is rolled into a tight envelope or into an elegant knot.

And only then — in one movement-this little bundle goes into your mouth. The first thing you hear is the deafening crunchy caramel flavor, followed by the explosion of sweetness of the sauce, the pungent bitterness of the onion and the refreshing moisture of the cucumber, which together with the melting meat create a symphony of textures and flavors. Each pancake is a new chord, where you can vary the amount of meat, onion, or sauce as you wish.

Duck soup

But that’s not all. Tradition dictates that the fire should be suppressed with not one, but three dishes. After the best slices with crispy skin are eaten in pancakes, we give the second portion — meat, cut into larger pieces, which are dipped in mustard or sweet sauce and eaten just like that, enjoying its pure taste. And the finale is a rich soup made from the same bones and leftover meat — thick, rich, with sour notes, which completes this culinary symphony, leaving the aftertaste of a long, happy lunch.

The Imperial Table Meal

Peking duck is eda, which should not be rushed. Each pancake is a small poem, and a true connoisseur will roll them slowly, savoring every moment. Witches, the main secret of this dish is its ability to unite not only products, but also people at the table, turning an ordinary meal into a ritual worthy of the Imperial Court.
